All this cold weather gets me in the mood to cook. I love to cook and bake, but when it's cold outside - making soups is my favorite. Plus, it's great meal prep for a Sunday.
Here is my Badass Chicken Tortilla Soup recipe. It's an oldie, but goodie and it never disappoints! If you try it, leave me a comment and let me know how it turned out. DM me with any question! Enjoy!
Badass Chicken Tortilla Soup
Ingredients:
1 Red & 1 Green pepper diced - OR make it easy and buy the three pepper trio already chopped
1 small/medium onion - make it easy and buy pre-chopped onion
4 cloves garlic - pressed/crushed
6-8 cups bone broth
1 can organic tomato soup
1 can organic diced tomatoes, or Rotel
1 can of organic corn
1 can organic black beans (rinsed)
1 can organic pinto beans (rinsed)
1 packet of Taco Seasoning
1 Rotisserie Chicken (deli section in the market) - deboned
1/4 c. heavy cream or half/half
Optional:
1 jalapeno (seeded and minced) in soup or as a topping.
Toppings: tortilla strips, avocado, sour cream, or cheese
Directions:
In a large pot saute veggies (onion, diced peppers, and garlic) in 2 tablespoons of olive oil until fragrant (4-6 minutes). Add: bone broth, tomato soup, diced tomatoes, corn, beans, deboned chicken and taco seasoning. cook all together for 1 hour. In the last 10 minutes, add in the heavy cream or half/half.
*You can totally leave out the cream at the end, it doesn't change the taste only really the color.
*The recipe originally called for 6 cups of broth, but I use 8 because I like mine a little more brothy/juicier. You can also substitute any broth, but over the years I have switched to bone broth because it's higher in protein, collagen (great for skin & hair) and other nutrients.
